Found a recipe today that we had to try –
Chile relleno casserole. (see my re-blogged post below or click the link for details!)
We made a few minor adjustments – mainly because we could not resist chipotle white cheddar and fire roasted green chiles!! We also used olive oil on the bottom of the pan instead of butter, but buttered the tops of the bread. This was just to try and cut back a little butter fat, and we love olive oil too. 🙂 Also, I had a jar of verde sauce that went very well with it- adds just a little kick of chile flavor.
AND IT WAS WONDERFUL! Looks good, too!
And here’s me enjoying the fruits of our not-so-labor. It was ridiculously easy to make!
Tastes great with verde sauce, tastes great with beer, and I’m sure it will taste great cold tomorrow as a packed lunch! Cheers!
